It's getting close to Sungolds' swan song ... well, for this growing season anyway. Appreciate these sweet little gems while you can in this sensationally simple salad.
INGREDIENTS
15 to 20 fresh Sungold tomatoes (larger ones halved, smaller ones whole)
1 diced avocado
1 tablespoon of finely chopped red onion
1 tablespoon of finely chopped cilantro
A handful of baby arugula
The juice of a quarter of a lemon
Salt to taste
PREPARATION
Combine all ingredients. Toss. You can thank us later.
